Best Practice to Clean and Tenderize The Chicken
Before Cooking It
Chicken meals are good and nutritious. That’s why there are so many Chicken recipes out there. However, the Chicken must be thoroughly cleaned, and water alone is not enough to do so. In addition, cleaning chicken for a healthier dish requires that you remove the gooey fats that are still there sometimes, maybe often.
I always advise to prepare the chicken a day before. Why? For 2 reasons:
ONE: You can do a little trick that tenderizes overnight the chicken flesh: You soak them overnight in Plain Yogurt, covered, in the fridge! The Yogurt is a natural tenderizer that works its magic overnight. You can do that also for meats.
But, before you do that, you must wash the chicken well. That is the 2nd reason to prepare a night before:
TWO: To clean the skinless chicken very well, and remove any fats, we do the following:
- wash them under running water over a colander,
- soak them for 10-15 minutes in water mixed with a handful of flour, 1 teaspoon of salt, and a lemon wedge. Rub the chicken a little with that liquid. These ingredients clean naturally and thoroughly the chicken. They remove any and all unpleasant odors, and allow you to remove easily any remaining fats.
- Remove them, and wash them well under running water. Place them in a colander to remove the excess of water.
All this practice takes little time. You can then store them in the fridge, coated with yogurt, for next day cooking. You wash off the Yogurt next day before you start.
Remember this practice always when you are planning to cook a chicken recipe!
