Banana Bread, Cinnamon flavored, Applesauce Enhanced, and Gluten-Free!

Amazing in texture, taste and health, this Gluten-Free Banana & Cinnamon Bread will delight you! Your guests and family won’t even know that it is gluten-free.
It is as good in texture, as tasteful in banana and cinnamon, and as delicious in the crunchy topping of Oats and Applesauce.
Need more convincing? I don’t think so!
Gluten-Free is one of the personal choices in food intake of my health-minded brother George. He loves my blog, and asked me for Gluten-Free recipes.
So, here, I am dedicating this to him with my love… and more the like to come!
Gluten is a protein composite in wheat, barley, and rye that can cause digestive issues, gas, bloating, diarrhea and even constipation, and gut inflammation to people who are gluten-intolerant.
And Did I Say: Healthier?
This recipe comes inspired from a Huffingtonpost gluten-free one, with some alterations from my side.
Healthier than the usual Banana Bread, this recipes uses Brown Rice Flour, Coconut Flour and Tapioca starch, which are healthier.
The sweetening is health-considered with the use of Brown Sugar, Unrefined Cane Sugar, and Unsweetened Applesauce, in moderate doses. And with the natural sweetness of the Bananas, which flavor further when baked, you have enough sweetness to enjoy it without being too sugary.
In addition to the great health benefits of the Cinnamon, the Flax Seeds, used here for thickening, are a rich source of micro-nutrients, dietary fiber, manganese, vitamin B1, and omega-3 fatty acid.
And there is more!
And let us not forget the health benefits of the Eggs, which are packed with Omega-3 Fatty Acids, Vitamins, Minerals and Protein. Eggs boost the Immune System, lower Risk of Heart Disease, improve Vision, promote Healthy Skin, and support Brainpower and Weight Loss.

- 1 Loaf Pan 23 x 13 cm / (9" x 5" )
- Cooking Oil Spray
- 3 Banana mature/soft; mashed
- 2 Egg
- 3/4 cup Cane Sugar unrefined
- 1/2 cup Brown Sugar unrefined
- 1/4 cup Coconut Oil melted
- 1 tbsp Vanilla Extract pure
- 1 cup Brown Rice Flour
- 1/2 cup Tapioca Starch
- 1 tbsp Coconut Flour
- Baking Soda
- 1/2 tsp Salt
- 1/4 tsp Ground Cinnamon
- 3/4 tsp Flax Seeds to thicken into for good texture
- 1/3 cup Oats gluten-free
- 1/4 cup Brown Sugar unrefined
- 1 tbsp Applesauce unsweetened
- 1 tsp Ground Cinnamon
Preparing Moist Ingredients
Preheat your oven (350°F).
Spray your loaf pan.
In a large bowl, combine well Group 1 (moist) ingredients.
Combining Basic Ingredients
In a side bowl, combine well the Group 2 (basic) ingredients, and then add them to the Group 1 (moist) ingredients, and stir.
Once well combined, pour it all into the loaf pan.
Working the Topping
Mix the toppings on the side, and sprinkle the mixture evenly on the top of the loaf.
Bake for 50 minutes.
Insert a toothpick in the center to check if it is well baked. If the toothpick doesn't come out clean, bake for another 10 minutes.
Cool it off!
Remove the loaf from the oven, and leave it to cool as is for 5 minutes.
Turn it upside down on a wire rack, and let it cool completely at room temperature.
