A Unique Festive Rice

Get Ready to be Amazed!

 

This particular rice dish has been a total success on my table. A recipe I have learned from my mother, it has been always requested from me by my guests. It is a rice I cooked for special occasions, but also for a cozy family meal when my children ask for it.

A Festive Veggie Rice that will delight you and your guests, a great choice of side dish for chicken and meat, and even a vegetarian one.

 


The Recipe: Get Ready to be Amazed!


 

Veggie RiceThe rice is cooked in water seasoned with vegetable stock cubes. We then incorporate green peas, corn, butter-fried onions and ham/turkey, and half of a rich creamy dressing.

The other half is drizzled on upon serving and topped with fresh chopped parsley and fried crispy pieces of ham.

The dressing is made of unsweetened condensed milk, mustard, mayo, and chopped hard-boiled eggs, resulting in a most delicious creamy dressing that makes all the difference in this dish.

Fancy Rich Rice Recipe

Ingredients

  • 2 cups Rice (long grain) washed
  • 1/2 cup Green Peas
  • 1/2 cup Corn (Mais)
  • 1 Onion (small) chopped
  • 350 gr Ham or Turkey (None if Vegetarian) chopped
  • 3 cubes Vegetable Stock
  • 2 tsps Butter unsalted
  • 4 cups Water

For The Dressing

  • 1/2 cup Mayonnaise
  • 1 tsp Mustard
  • 1 can Condensed Milk unsweetened

For the Toppings

  • 1/2 cup Fresh Parsley chopped finely
  • 1 tbsp Olive Oil

Instructions

Cooking The Rice

  1. In a deep casserole, over high heat, bring the water and Vegetable cubes to a boil.

    Add the rice and 1 tsp of butter, and mix well.

    When it starts boiling, reduce the heat and leave it to simmer for about 20 minutes or until the water dries off.

Frying for the Dressing

  1. Meanwhile, in a separate fry-pan, melt 1 tsp of butter, and fry in the onions to crispiness.

    Remove the onions onto a side plate.

  2. FOR NON-VEGETARIAN:

    In the same butter, fry the chopped ham (or Turkey).

    Remove aside 2 tbsp of the fried ham to garnish later, and add the remaining to the onions.

The Dressing

  1. Prepare the dressing by mixing all its ingredients, and set aside.

Enhancing the Rice

  1. When the rice is cooked, remove from heat, and stir in the fried onions (and the chopped ham for the non-vegetarians). 

  2. Stir in 1/2 the dressing then gently the green peas and the corn.

    Make sure all is well blend without mashing the green peas and corn.

Finalizing the Rice

  1. You may transfer your rice now into a serving plate OR:  into buttered molds, pressing well but gently, then turning it upside down into individual plates.

    Whatever option you opted for, drizzle on the rice the other 1/2 of the dressing.

Garnishing

  1. Sprinkle on the chopped parsley. 

    Non-vegetarians: Top it with the remaining crispy-fried ham.
