Known as the Kabseh Samak, the Cod Fish Pilaf is particularly strong in the aroma of its various spices, which brings an exotic flavor, along with its richly appealing presentation, to your dinner table.



The culinary term Kabseh indicates the method of cooking the main ingredient with the rice, be it fish, chicken or meat. It is what the western world knows as pilaf.

Yet, behold, taste and flavor of our Cod Fish Pilaf are nothing like the western pilaf or the Spanish paella.

Our particularity, as I mentioned, is in the variety of spices, as well as the garlic and onions with which we cook the main ingredient, and our cultural toppings of roasted nuts and almonds.

The original recipe uses the Brown Spotted Reef Cod but any fish filet of the Cod family works perfectly well.

You will enjoy this dish along with a side dish of our rich Fattoush Salad.

Cod Fish Pilaf: Kabseh Samak

  • 1 1/2 Kg Cod Fish Fillet; Could be substituted with as Brown spotted reef cod
  • 1 cup Onion sliced
  • 4 tsp Garlic mashed
  • 1/4 cup Tomato Sauce in can
  • 1 Kg Basmati Rice
  • 1 1/2 tbsps Fish Seasonning (Knorr or similar)
  • 5 tbsps Butter unsalted
  • 2 tbps Savory Rice Seasonning (Knorr or similar)
  • 1 1/2 tsps Lebanese 7-Spice
  • 1 tbsp Lemon and Herb Seasoning (Knorr or similar)

To Garnish

  • 3/4 cup Pine Kernels
  • 4-5 tbsps Fresh Cilantro chopped
  • 1 tbsp Olive Oil extra virgin


Cooking The Fish

  1. In a large pan, over medium heat, melt the butter, and cook in the onions and garlic until tender. Mix in the 7-Lebanese spice.

  2. Season the fish fillet with the Fish Seasoning on both sides, and place it on the cooking onions and garlic. Cook each side for about 1 minute or until pinkish white. Remove it with the onion/garlic mixture and set aside.

  3. In a separate pan, over medium heat, pour the Tomato sauce, add the Savory Rice Seasoning, stir for a minute then mix in the rice and the water.

  4. Gently place the fish mixture on top of the rice, and bring to a boil over high heat. Cover and leave it to simmer on low heat until well cooked.

    NOTE: Cooking time depends on the thickness of the fish fillets you bought. Please adjust the timing accordingly.

Serving and Garnishing

  1. Using a serving spoon, gently transfer the Fish and rice onto a serving platter.

  2. Sprinkle on the Lemon & Herb Seasoning, followed by the cilantro.

  3. Top it all with the roasted pine nuts.
