How to Make Chicken Shish Taouk Dish and Wrap at Home

The Lebanese Chicken Shish Taouk

 

Our Shish Taouk has become as loved in Western countries as in ours and  our region. You can walk the streets of downtown Montreal and pass by several fast food restaurants offering Shish Taouk, along with our Falafel Wraps. And if you go past the center and through the districts, you won’t miss them neither. Nor would you miss the lines of clients waiting to order.

The wraps might differ slightly  from place to place with the add-ons, but it is still our Shish Taouk.

The Chicken Shish Taouk is another well-traveled and well-loved dish of ours that I got to see in various countries throughout my travels.

So, what’s the secret?

A combination of various spins, which culinary art I am about to share with you.

 


THE RECIPE


First, we use boneless and skinless chicken breasts trimmed of all fat. We cut them in cubes and marinate them in a special sauce in the fridge overnight.  The sauce contains plain yogurt that allows a soft chicken flesh at consumption. The grilling or roasting shouldn’t reach a burning or drying point.

We use our Garlic Cream Spread for dressing, along with our creamy Hummus, and Mayonnaise. All is wrapped with our Cucumber Pickles and Tomato slices.

That is the recipe I am giving you today, with the easier method of roasting the chickens in the oven.

 

Some fast-food restaurants have been adding lettuce to the Shish Taouk wrap, and some even include french fries and Turnip Pickles. That would be a personal preference if you wish to go for these adding ingredients.

How to Make Chicken Shish Taouk at Home

Ingredients

  • 500 g Chicken cut in cubes
  • 1 cup Mushroom in can; washed well in a sieve under running water

For the Sauce

  • 10 cloves Garlic mashed
  • 1/2 cup Plain Yogurt Lebanese or Greek
  • 4 tbsps Grape Vinegar
  • 1 tbsp Tomato Paste
  • 2 tbsp Vegetable Oil
  • 1/4 tsp Dry Oregano Herb
  • 1/4 tsp Hot Pepper
  • 1 tsp Pepper
  • 1 tsp Salt

For Wraps, if desired. You can make 4 wraps with the above quantity.

  • 2 Lebanese Pita Bread Medium
  • 1 tbsp Low-Fat Mayonnaise
  • 1 tbsp Lebanese Garlic Spread
  • 4 tbsps Hummus
  • 2 Tomatoes (small) sliced
  • 2 Cucumber Pickles Sliced in length

Instructions

  1. Mix well all the ingredients of the Sauce. Add the mushrooms and the chicken cubes, and mix well. Make sure the sauce covers well all sides of the chickens.

    Place them in a non-stick baking pan and cover with an aluminum sheet. 

    Roast in the preheated oven for 40 minutes, mixing them from time to time.

    Serve hot sided with Fried Potatoes, and Garlic Spread or Hummus, or both.

    For the Shish Taouk Wrap, follow the next steps.

The Shish Taouk Wrap

  1. Open each Bread in two loafs on your cutting board or kitchen counter. Dividing the ingredients in 4 equal parts, proceed as follows:

    Spread the mayonnaise then the garlic, then the Hummus.

    Place the Shish Taouk in length (it would be about 5 pieces for each loaf). Top them with the tomato slices, and arrange the pickles by the chickens' length.

    Wrap them up and enjoy them hot, or even cold.

Recipe Notes

This is the quickest recipe for the Shish Taouk. For an optimal outcome, I recommend marinating the chicken and mushrooms in the sauce for 12 hours, or overnight, in the fridge.

This recipe is applicable for Grill and BBQ. You can then arrange them in skewers, and grill them for 20 minutes.
