Coconut Vanilla Truffles

 

Hello my young friends!

You can now make them at home, these deliciously tempting coconut balls your eyes hook on in the supermarket. And they are super easy to make!

All that you need is a can of Sweetened Condensed Milk, Vanilla Extract, and Coconut. A fresh coconut will be ideal, but this recipe can work just fine with shredded or grated coconut.

In that case, because they are sold dry, we need to soften them nicely. A little practice to do: Wash them, then soak them in water for 5 minutes, and remove them on a sieve or colander.

Ingredients

  • 1 can Sweetened Condensed Milk (Large)
  • 500 gr Fresh Coconut (grated) If unavailable, use dry coconut, wash it well, soak it in water for 5 minutes, and drain it.
  • 1/2 tsp Vanilla Extract

Instructions

  1. Divide the grated coconut in two portions.

    Mix well one portion with the condensed milk, add the vanilla extract, and mix very well into a cohesive paste. 

    Divide the coconut in small balls of equal size. Dip and roll each in the 2nd portion of grated coconut, and place on a serving plate as you finish each.

    Chill in the fridge until serving time, and for not less than 10 minutes.

Suggestion

  1. I love these delicate pastry balls stuffed with hazelnut. If you would like to try it, just press one whole hazelnut on the coconut paste you are rolling, roll it well to have it in the inside center, and then dip it in the grated coconut.
