Ah, these handsome logs of cheese could infatuate us forever! This one today is crunchy with smoked almonds, velvety with goat cheese, and taste-lavishing with fine herbs. All this gourmet delight is simply prepared in 15 minutes!
This particular Creative Cheese, unlike many, does not required the usual 24 hours chilling to come together into a cheesy texture. Thirty minutes suffice, and you are set to serve it and enjoy it.
Now, about these lavishing fine herbs. Oregano, Rosemary, and Thyme come together to give you that lavishing taste. I strongly recommend you use Zaatar Mixture, which goes beyond a simple ingredient of only thyme. It is an extraordinary blend of nine culinaryherbs, plus sesame seeds. The difference in outcome is significant.
However, if it is not accessible to you, go ahead with the Dry Thyme.
This recipe also incorporates fresh parsley, and the extra seasoning of ground Lemon Pepper. It yield two logs of cheese. If you decide to buy the cheese in logs instead, go for two logs of around 225 gr each. That’s about 8 oz each. The Almonds should be purchased ‘smoked’. These are usually seasoned, which is a taste we count on for this recipe.

Goat Cheese Zaatar Logs Crusted with Almonds
- 500 gr Goat Cheese If you prefer to buy it in logs, you will need 2 of 225g or 8 oz
- 340 gr Smoked Almonds crushed finely
- 2 tbsps Zaatar Mixture or Dry Thyme if you don't have Zaatar
- 2 tbsps Oregano finely chopped
- 4 tbsps Parsley finely chopped
- 2 tbsps Ground Lemon Pepper
- 2 tbsps Rosemary finely chopped
Divide the Cheese in two equal parts, and form them into 2 logs. If you bought your cheese in logs, prepare them on the counter.
In a bowl mix well the almonds, the herbs, and the Zaatar, and season with the Lemon Pepper.
Pour that mixture onto a plate, and spread it. One by one, bring on the cheese logs, and roll them over, pressing very gently for the mixture to adhere. Turn them on their extremities, and press them gently on the mixture to cover both sides.
Wrap the logs with kitchen plastic-film, and store in the fridge to chill nicely for 30 minutes.
At consumption time, unwrap and serve, slicing as you and your family eat. Enjoy it with toast or crackers, green seedless grapes, and... a glass of wine if you desire.
