These are the butter crunchy biscuits that we make with honey, and no yeast.  They are thin and light,  and store well, which serves their purpose as delicious snacks. Kids and adults alike love them in their lunch boxes.

I myself love them with my afternoon tea, and to have them handy to offer my friends when they show up unexpectedly.


The preparation takes 15 minutes, and the baking some 18 minutes. The dough comes out moist and requires chilling in the fridge for about an hour to come beautifully together.

The recipe yields 24 small biscuits. You may make them a little bigger depending on your cookie cutter.

Honey Butter Biscuits with Almonds

  • 2 cups Flour (all-purpose)
  • 3/4 cup Butter (unsalted) softened
  • 2 tbsps Sugar
  • 2 tbsps Honey
  • 1 Egg Yolk and white separated and whisked in different bowls.
  • 1/3 cup Almonds poached, peeled, and chopped


  • Cookie Cutter
  • Baking Tray covered with a Baking Sheet


  1. In a bowl, mix the softened butter with 1 tablespoon of sugar and the honey. Add the egg yolk, and blend it in. Stir in the flour, mixing by hand. 

    Wrap the dough with a kitchen film, and place it in the refrigerator for 1 hour. 

  2. Preheat the oven to 350 ° F (175 ° C).

    Roll out the dough on the counter, and extend it to about 3 mm thick or 1/4 inch. Use the cookie cutter to cut the dough into rondelles. 

    Whisk the egg white in a bowl, and brush it all over the rondelles. Sprinkle the chopped almonds over, then the sugar (1 tbsp). 

Baking and Serving

  1. Place the rondelles on the baking tray, and into the oven. Bake for about 18 minutes, maximum 20 minutes.

    Allow them to cool before serving or consuming. Enjoy them!
