The Lebanese Apricot Cream Bites

  • 150 gr Dry Apricots no pits
  • 1 cup Fresh Orange Juice
  • 1 stick Cinnamon

For the Cream (1 cup)

  • 3 slices Soft (American) Bread White
  • 1/2 cup Powder-Milk no-fat
  • 1 cup Water
  • 1 tbsp Sugar
  • 1 tbsp Corn Starch
  • 1 tbsp Orange-Blossom Water


  • 4 tbsps Pistachio Nuts grounded
  • 2 tbsps Orange Flower Jam


Preparing the Ashta Cream

  1. Trim off the dark borders of the bread, and cut the soft parts into cubes.

    In a deep pan, mix the milk, water and starch. Turn on the heat to medium and add the bread cubes.

  2. Stir continuously, preferably with an electric hand-mixer, until the liquid thickens into a creamy texture.

    Pour in the Orange-Blossom Water, mix well, and set aside.

Cooking the Apricots

  1. Pour the orange juice n a separate pan. Add the cinnamon stick and the dry peaches and cook on medium heat for 5 minutes or until the peaches soften.

  2. Transfer the Apricots onto a sieve, then place them by small bulks between two layers of nylon wrap. 

    Use a dough roller to extend them and flatten them by pressing and rolling on.

    As each bulk is completed, remove the Apricots into a serving plate.

Finalizing the Dessert and Serving

  1. Scoop on each flattened Apricots 1 teaspoon of the Ashta Cream.

    Drizzle on the Pistachio nuts, and top each with 2 jam leafs.
