Pistachio Crusted Cheese Balls
with Roasted Garlic Flakes and Dry Cranberry

With this 20 min recipe that requires no overnight chilling, you are set for a healthy snack and appetizer for you and your family to relish on any time of the day. If you intend it for breakfast, consider preparing it a night before and store it in the fridge. No one wants to start working in the kitchen so early in the morning, do you? 🙂
This Creative Goat Cheese is actually composed of two cheeses. We blend in Cream Cheese with a little less than half the amount of Goat Cheese. We incorporate dry cranberry for that subtle sweetness we love with strong cheese, and boost it with roasted garlic flakes for a mild permeating pungency.
The contrast is a beautiful mix of aromas that are increased further with Ground Pepper and little salt.The coating with Pistachio Nuts comes to complete this fine gourmet cheese, adding the enjoyable contrast in texture.
This recipe yields one big ball, or several small ones, at your preference and convenience. In spite that it requires some extra work, I love dividing the cheese in several equal portions because they look great as individual appetizer, and they last fresh longer.

Pistachio Cheese Balls with Garlic Flakes and Cranberry
- 300 gr Goat Cheese softened (about 10-oz)
- 115 gr Cream Cheese softened (about 4-oz)
- 35 gr Dried Cranberries chopped
- 2 tsps Roasted Garlic Flakes
- 1/4 tsp Ground Pepper
- 1 pinch Salt to taste
- 75 gr Pistachio Nuts grounded
Pour the pistachio nuts into a bowl.
In a separate bowl, combine the 2 cheeses, and mix and mash. Add the remaining ingredients, season, and combine well until you obtain a good creamy-cheesy texture, and your ingredients are well distributed.
With your hands, form a well-rounded ball of the cheese or divide them in equal small balls if you desire.
Coat well by placing it (or them, one by one) in the pistachio bowl, and gently roll it (or them) to coat.
Wrap the Ball in kitchen plastic-film. If you divided it in several balls, you don't need to wrap them individually. Place them in a serving plate, without them touching, and wrap it all together.
Place the wrapped cheese(s) in the fridge to chill, and for the garlic flakes to soften a little and diffuse their aroma by absorbing the cheese moisture. One hour suffices, or leave them in until consumption time.
Enjoy with crackers or toasts.
