Healthy Strawberry Chocolate Truffles

You are going to love these truffles! They are as delicious as they look in the photos.
They are made of fresh strawberries blended with shredded coconut, oats, coconut oil, and rice malt syrup. They turn into a nice pink paste that we place in the freezer for 15 minutes.
We melt dark chocolate in the microwave, which is easier and faster. The strawberry paste is then divided into 24 small balls that we dip in the melted chocolate with a fork. We then place them in the fridge for 30 minutes to set.
Do you know that the Strawberry if called The Queen of Fruits in Asia? It is so because it is a very healthy fruit that is packed with Vitamins, Fiber, and Antioxidants. It is also high in Potassium and Manganese. The Strawberry is said to boost your immunity and maintain Eye Health.
My recipe here is inspired by a healthy recipe from Eat Yourself Green. I made small changes to make it easier on you to make these truffles. The recipe is for 24 small truffles. I said you would want to have enough for you, your family and friends.
The nice thing about these truffles as well is that you can store them in airtight container in the fridge for 5-7 days.
Strawberry Chocolate Truffles
Recipe inspired from Eat Yourself Green
- 300 gr Fresh Strawberries washed and patted dry
- 235 gr Dark Chocolate
- 1 1/2 cups Oats
- 1/2 cup Shredded Coconut
- 4 1/2 tbsps Coconut oil melted
- 1 1/2 tbsps Rice Malt Syrup
In a blender, or food processor, add the Strawberries, the Oats, the Shredded Coconut, the Coconut oil, and the Syrup. Blend well into a smooth paste.
Place it in a bowl and in the freezer for 15 minutes to set.
While you wait, place the chocolate in a bowl, cover and run it in the microwave for 1 minute.
Remove, stir it, and run it again in the microwave for 30 seconds. Remove, stir, and back in the microwave for another 30 seconds. Keep doing this until you get a very smooth liquid chocolate.
On the kitchen counter, place a tray with a baking sheet. Bring the strawberry paste from the fridge, and put it in front of you.
With a tablespoon, scoop from the Strawberry mixture and create small balls, placing them on the tray.
Now that you are done with all the paste, and your balls are ready, we are going to coat them with chocolate.
Bring the melted chocolate in front of you. Using a fork, gently dip each ball in the chocolate mixture. wait till the excess drips down, and place it back in the tray.
Once all done, place the tray in the fridge for 30 minutes.
Serve and enjoy!
Store what you did not consume the same day in an airtight container, preferably in the fridge. They can last 5 to 7 days.
