Deliciously Refreshing and Basil Fragrant
A Vegan Summer Salad of Fruits and Beets
I fell in love with this salad recently at the garden lunch of my best friend Lisa. One has just to look at the combination of its ingredient bites and glossy colors to expect an enjoyable deliciousness. However, it was a pure delight that follows, and a refreshing boost of energy.
I was barely half through my enjoyment of this salad when I was compelled to ask my friend to share the recipe with my readers. It is one of a kind, and it can’t possibly go without sharing it with you!

An easy and quick recipe that takes barely 15 minutes if your beets are already roasted. Otherwise, please visit my page on how to best roast the beets. The salad is composed of equal quantity of the main ingredients: Fresh Mango, Fresh Avocado, and Roasted Beets.
Cherry Tomatoes add to the freshness of the salad, and few Fresh Basil leaves enhance the fragrance. It is seasoned with only a dash of salt, little extra-virgin olive oil, and just enough lemon juice to give it a zesty sparkle. The liquid seasoning should be really to the minimum.

Refreshing Fruit and Root Vegan Salad with Basil and Lemon
- 2 Medium Beets Roasted, peeled and cut in bites
- 2 Mangos peeled and cut in bites
- 2 Avocadoes peeled and cut in bites
- 6-7 Cherry Tomatoes Cut in halves
- 4 leaves Fresh Basil cut in halves
- 1 tsp Fresh Lemon Juice
- 1 tsp Olive Oil extra virgin
- 1 dash Salt
Place all the ingredients in a salad bowl, and toss gently.
Sprinkle a dash of salt, and drizzle the lemon juice and olive oil. Toss gently several time. Chill in the fridge for 10 minutes, and serve.
