Chickpea Kibbeh Balls in Yogurt Sauce
A Vegetarian Kibbeh Labnieh
For our vegetarian friends who fancy our delicious Kibbeh Labnieh, this is a dish that follows similar recipe and taste as good… without any meat. It is also easier and quicker to make.
The Kibbeh balls are made with Fine Burghul, Chickpeas, and flour, and season with Cumin and a dash of salt. I advise to make the balls the smallest possible, specially when children are involved. They love it better.
The Yogurt Sauce is made similar to our dishes concocted with hot yogurt: Stuffed Zucchini in Yogurt, Kibbeh Labnieh, Shish Barak Dumplings and others. These are dishes we love in winter for being warming but also in summer for being stomach-soothing, healthy, and delicious.
This healthy dish takes a total of 30 minutes to get ready. We consume it topping our Rice Vermicelli, and side it with a green salad.

Vegetarian Chickpea Kibbeh Labnieh
For the Balls
- 1 handful Burghul
- 3 tbsps Chickpeas in can
- 1/2 cup Flour or as needed
- 1/4 tsp Cumin
- 1 dash Salt
- 2 tbsps Liquid of the chickpeas' can
- Water to form the dough
For The Sauce
- 500 gr Plain Yogurt
- 3/4 cup water
- 1 tbsp Corn Flour
- 1/2 tsp Salt or as desired
- 1/4 tsp Lebanese 7-Spice
- 1 tsp Cilantro-Garlic Mixture
- 2 tbsps Chickpeas in can
Preparing the Balls
In a bowl, mix the chickpeas, the Burghul, and the 2 tbsps of the chickpeas' liquid.
Season with cumin and salt, and gradually add the flour as you mix.
Also gradually, start adding water and mixing until the ingredients come together into a seeming dough.
Form the dough into small balls. Don't worry if they are not homogeneous. They shouldn't be.
Set them aside.
Preparing the Sauce
Pour the Yogurt in a large saucepan.
Mix well the Corn flour in the 3/4 cup of water, and stir it in the yogurt.
Turn on the heat to medium-high, and stir continuously to a boiling point.
Lower the heat, season with salt and the 7-spice, and stir.
Allow it to simmer for 5 minutes, stirring regularly.
One by one, gently drop the Balls in the yogurt sauce. Add 2 tablespoons of chickpeas, and mix gently. Increase the heat to medium, and bring to a boil, stirring gently every few minutes.
Stir in the garlic-cilantro mixture, and allow it to simmer on Low heat for 10 minutes.
Serve hot over rice.
