“What is it with you guys and the Pine Kernels?” It made me laugh the few times I was addressed with that question. It’s kind of true that they are almost always present in my Lebanese dishes when hosting.

It isn’t a fanciness of mine. It is just that we Lebanese have them in so many of our dishes and desserts. I can make you a very long list but I’ll spare you for now.

 

We do love their sweet nutty flavor and crunchy texture, and we do make it a point to benefit from their numerous health benefits.

We consume them raw, toasted, fried, or baked, as toppings or incorporated in the culinary preparation and even in our juices.

 

 

Pine Kernels or Nuts are not actually nuts as most assume and as most of us call them. They are Seeds. They are the Seeds of the Pine Trees. The process from the harvest to our tables (or to the supermarkets) requires quite a lot of work, which explains their usual high price.

 

Lebanon is a country of Pines and Cedars. Our Pines are abundant. They are trees of the Mediterranean, and in Lebanon you can see them in the coasts and by some highways, and also extending their proud presence up to the mountains where red soil permits

They rise high in all beauty, and they provide us plenty of pine kernels. That alone could answer the question of the constant presence of these valuable seeds in our food.
