6 Roasted beets cut in bite cubes
For the Dressing
6 tbsps Tahini Sauce
1 clove small Garlic mashed
4 tbps Lemon Juice
1/2 Cumin Seeds tsp
4 tbsps Olive Oil extra virgin
1 cup Yogurt Plain (Lebanese or Greek)
1 tsp Salt
1/2 tsp Pepper

    Rule #1: Roast your beets instead of boiling them to preserve their nutritious values and authentic taste. Boiling them takes away most of their health benefits.

    Rule #2: Roast your beets ahead of time, and store them in your fridge in an air-tighten container.  This will allow a super quick preparation of any of their salads.

    Prepare the dressing, whisking together: Tahini sauce, mashed garlic, Lemon Juice, Cumin Seeds, Extra-Virgin Olive Oil, Plain Yogurt, Salt and Pepper.

    1- In a salad serving plate, mix gently the beet cubes and the dressing.
    2- Garnish with thinly chopped parsley
    3- Chill in the fridge for 15 minutes before serving.
