Ingredients

Adjust Servings:
2 cups Rice Long washed
1/2 cup Green Peas in can
1/2 cup Corn in can
1 Onion (small) chopped
350 gr Ham or Turkey chopped
3 cubes Vegetable Stock
2 tsps Butter unsalted
4 cups Water
The Dressing
1/2 cup Mayonaise
1 can Condensed Milk unsweetened
2 Hard-Boiled Eggs chopped roughly
1 tbsp Mustard
Toppings
1/2 cup Fresh Parsley chopped finely
1 tbsp Olive Oil extra-virgin

      A Unique Festive Rice

      Get Ready to be Amazed!

      CK Veggie Rice

      This particular rice dish has been a total success on my table. A recipe I have learned from my mother, it has been always requested from me by my guests. It is a rice I cooked for special occasions, but also for a cozy family meal when my children ask for it.

      The Festive Veggie Rice can compliment and enhance any main dish of poultry or meat, and even a vegetarian one.

      The Recipe: Get Ready to be Amazed!

      Veggie RiceThe rice is cooked in water seasoned with vegetable stock cubes. We then incorporate green peas, corn, butter-fried onions and ham/turkey, and half of a rich creamy dressing.

      The other half is drizzled on upon serving and topped with fresh chopped parsley and fried crispy pieces of ham.

      The dressing is made of unsweetened condensed milk, mustard, mayo, and chopped hard-boiled eggs, resulting in a most delicious creamy dressing that makes all the difference in this dish.

      Cooking The Rice

      In a deep casserole, over high heat, bring the water and Vegetable cubes to a boil.
      Add the rice and 1 tsp of butter, and mix well.
      When it starts boiling, reduce the heat and leave it to simmer for about 20 minutes or until the water dries off.

      Frying for the Dressing

      Meanwhile, in a separate fry-pan, melt 1 tsp of butter, and fry in the onions to crispiness.
      Remove the onions onto a side plate.
      In the same butter, fry the chopped ham (or Turkey).
      Remove aside 2 tbsp of the fried ham to garnish later, and add the remaining to the onions.

      The Dressing

      Prepare the dressing by mixing all its ingredients, and set aside.

      Enhancing The Rice

      When the rice is cooked, remove from heat, and stir in the fried onions and ham, 1/2 the dressing then gently the green peas and the corn.
      Make sure all is well blend without mashing the green peas and corn.

      Completing The Rice

      Optional: Transfer the rice into a buttered mold, press well but gently, then turn it upside down into a serving plate.
      Once your rice is on the serving plate, whatever option you opted for, drizzle on the other 1/2 of the dressing.

      Garnish & Serve

      Sprinkle on the chopped parsley and top it with remaining crispy-fried ham.
